Basic Ingredients for Pancakes:
- 1 Egg
- 1 cup of self-raising flour
- 1 cup milk Pinch of salt
- 25g of butter
Ingredients to Create Rainbow Pancakes:
- Different food colourings
- Chopped or pureed fruit, like strawberries, bananas, kiwis, cherries or mangoes.
Step 1 - Prepare Your Pancake Batter
Put the flour and pinch of salt into a large mixing bowl. Make a hollow in the middle and crack the egg in. Beat together to form a thick paste and gradually add the milk to make a smooth batter. Put the mixture into the fridge to rest for 15 minutes.
Step 2 - Add the Colours of the Rainbow
Divide the mixture into several different bowls and mix in drops of food colouring, so that you have four or five different coloured batters.
Step 3 - The Pancake Breakfast Recipe
Heat a frying pan and add the butter, swirling it around the pan as it melts. Pour out the excess into a clean cup to re-use before each pancake. Take one bowl of mixture and pour a saucer-sized amount into the centre of the frying pan.
Step 4 - Make the Pancakes
Let the pancake cook for a few minutes until small bubbles appear on the surface. Flip the pancake and cook for a minute or so.
Step 5 - Add a Sprinkle of Fruit and Enjoy a Tasty Breakfast
Place on a plate and repeat until you have used up all of the bowls of batter and have more than one stack of pancakes. Sprinkle a handful of fresh fruit of similar colours to the pancakes and serve with plain yoghurt or honey.
